Lachcha Paratha (Layered Indian Bread)
A layered and crispy bread, this paratha is an ideal accompaniment for thick-gravied dishes.

Instructions

Knead 2 cups flour with a pinch of salt and water into a soft dough; set aside.

Combine 3 tablespoons ghee with 1 tablespoon flour for a mixture; set aside.

Divide dough into equal balls, then each ball into two portions.

Roll each portion into a long, finger-thick noodle shape.

Coil the first noodle into a spiral, then on a floured surface, roll it into a 5-inch flat, 1/3-inch thick circle.

Grease the circle's top with the ghee-flour mix.

Roll the second noodle similarly, place it over the first circle, and repeat for all dough.

Preheat a flat pan over medium heat.

Fry each paratha: place on the pan, turn after 30 seconds, spread ghee on top, flip, and grease the other side. Continue turning and frying until crisp and golden.
