Labskaus is a hearty German one-dish meal featuring a blend of mashed potatoes, corned beef, and beets, traditionally served with a fried egg and pickles.

Instructions

  1. Start boiling salted water for the potatoes.

  2. Cook potatoes until soft; drain, then mash with milk and enough broth to moisten.

  3. Brown onions in 2 teaspoons butter for 3 minutes, then set aside.

  4. In the same pan, warm corned beef cubes through.

  5. Finely chop 5 beet slices; reserve remaining beets.

  6. Fold the reserved onions, corned beef, chopped beets, and beet juice into the mashed potatoes; season to taste.

  7. Melt 2 teaspoons butter in a non-stick pan and fry 3 eggs, seasoning with salt and pepper.

  8. Divide labskaus onto 3 warmed plates. Top each with a fried egg, rollmops, reserved pickled red beets, and spicy German pickles; serve immediately.
