Instructions

  1. Combine 1 cup heavy cream with saffron threads in a small saucepan, heat gently until it boils, then cool and refrigerate until chilled.

  2. In a stand mixer, combine the chilled saffron-cream with the remaining 1 cup cream; beat until soft peaks form.

  3. Gradually whisk in sugar, then add sweetened condensed milk, cardamom, rose water (if using), and 3 tablespoons pistachios, whisking to combine.

  4. Transfer the mixture into flexible silicone popsicle molds or paper cups.

  5. Sprinkle the remaining pistachios on top; if using paper cups, cover with aluminum foil and insert popsicle sticks through the foil.

  6. Freeze for 6 to 12 hours until firm.

  7. Unmold from silicone molds or peel away paper cups before serving.
