Kruidnoten Cookies (Dutch Ginger Nuts)
A sweet cookie, often considered a milder counterpart to spicy speculaas, is traditionally enjoyed during Dutch 'Sinterklaas' festivities.

Preheat the oven to 347 F (175 C).

In a large bowl, mix and knead all ingredients except the egg white. Cover the dough and set aside for one hour.

Prepare a cookie sheet by greasing or lining with parchment paper.

With wet hands, form the dough into 1/2 inch (12 mm) balls and arrange them on the prepared sheet.

Flatten each ball slightly with your thumb.

Brush the cookies with egg white.

Bake for approximately 20 minutes, or until lightly browned, then allow them to cool.
