Grind the toughest ingredients, such as lemongrass, makrut lime leaves, and galangal, in a mortar and pestle or food processor until a paste forms.

Gradually add the remaining ingredients, grinding well after each addition to create a thick paste; if using a food processor, add 1-2 teaspoons of water if the motor struggles.

Transfer the paste to a lidded jar, pour a tablespoon of oil over the top to prevent drying, and store in the fridge for up to five days.
