Kosher Vegetarian Bean Cholent (Parve)

Instructions

  1. Soak beans in water overnight, then drain when ready to cook.

  2. Heat oil in a skillet and sauté onions for 5 to 7 minutes until translucent.

  3. In a crock pot, combine sautéed onions, drained beans, and barley. Add water to cover, bring to a boil, then reduce heat and cook covered for 30 minutes.

  4. Add potatoes and continue cooking covered on low heat for 30 more minutes.

  5. Stir in onion soup mix and tomatoes, then cook tightly covered on low heat for several hours or overnight, checking water level occasionally and adding if necessary.
