Instructions

  1. Preheat the oven to 375 F (190 C) and grease an 11 x 8 inch baking pan.

  2. Grate carrots, celery, zucchini, potatoes, parsnip, onion, and garlic into a large bowl.

  3. Mix in beaten eggs, potato starch, baking powder, salt, pepper, and oil until thoroughly combined.

  4. Transfer the kugel mixture to the prepared baking dish.

  5. Bake for 70 minutes, or until cooked through and golden brown.
