Preheat the oven to 350 F and line 2 large baking sheets with parchment paper.

Place cauliflower florets in a large bowl.

In a separate bowl, whisk together sugar, salt, onion powder, garlic powder, paprika, and turmeric; then slowly whisk in olive oil until combined.

Pour the spice and oil mixture over the cauliflower and toss thoroughly to coat, adding 1-2 more tablespoons of olive oil if needed for very large quantities.

Spread cauliflower evenly on the prepared baking sheets and roast for 30 minutes, stirring once or twice, until cooked through.
