Instructions

  1. Dry roast dry red chiles in a hot pan until aromatic; set aside.

  2. In a food processor, grind the roasted chiles with coriander, cumin, fenugreek, black peppercorns, turmeric, grated coconut, 2 onions, garlic, and tamarind pulp to a smooth, thick paste, without adding water.

  3. Heat oil in a pan; fry the remaining onion until golden.

  4. Add chicken and stir-fry until browned.

  5. Stir in the masala paste and fry for 10-15 minutes until oil separates.

  6. Add 1 1/2 cups hot water and mix thoroughly.

  7. Bring to a boil, then simmer for 10 minutes until the gravy thickens; turn off heat.

  8. Garnish with fresh coriander; serve with rice or flatbreads.
