Korean Vegetable Porridge (Yachae Jook)

Instructions

Soak rice for at least 90 minutes; drain thoroughly.

In a large pot, heat sesame oil over medium heat, then sauté onion, carrot, and radish for 2 to 3 minutes.

Add the drained rice and stir-fry for an additional minute.

Pour in the soup stock and bring to a boil.

Reduce heat to medium-low, simmer for 30 minutes.

Stir and continue cooking for 10 more minutes, then season with salt and pepper to taste.
