Instructions

In a large bowl, combine water and salt.

Add cabbage, ensuring it is submerged, and soak for 5 to 6 hours.

Rinse cabbage in cold water, then squeeze out excess liquid.

In a separate large bowl, mix garlic, ginger, red pepper flakes, sugar, and scallions.

Add the rinsed cabbage and toss to thoroughly coat with the seasoning.

Pack the seasoned cabbage into a large airtight jar.

Ferment in a cool place for 2 to 3 days, then serve or refrigerate.
