Instructions

  1. In a large bowl, combine water and salt.

  2. Add cabbage, ensuring it is submerged, and soak for 5 to 6 hours.

  3. Rinse cabbage in cold water, then squeeze out excess liquid.

  4. In a separate large bowl, mix garlic, ginger, red pepper flakes, sugar, and scallions.

  5. Add the rinsed cabbage and toss to thoroughly coat with the seasoning.

  6. Pack the seasoned cabbage into a large airtight jar.

  7. Ferment in a cool place for 2 to 3 days, then serve or refrigerate.
