Instructions

  1. Heat a lightly greased sauté pan over medium heat.

  2. Sprinkle 1 teaspoon salt over zucchini slices.

  3. Whisk 1 teaspoon salt into the beaten egg in a bowl.

  4. Place flour in a separate shallow dish.

  5. Coat zucchini with flour, then dip in the egg mixture, and place into the hot pan.

  6. Sauté zucchini for 3 to 4 minutes per side, until light golden brown, turning once.
