Korean Cabbage Soup (Baechu Guk)

Instructions

  1. In a large pot, bring beef broth to a simmer, then add and dissolve soybean paste.

  2. Once boiling, reduce to a simmer, and add cabbage and garlic.

  3. Cook for approximately 20 minutes, until the cabbage is very tender.

  4. Remove from heat, then stir in black pepper and chopped scallions.
