Instructions

  1. In a soup pot or large wok, stir-fry marinated bulgogi, its marinade, and sliced onion until the beef is cooked.

  2. Add water to cover, along with carrots, bean sprouts, and mixed vegetables; bring to a boil, then reduce to a low simmer.

  3. Simmer for 5 minutes before adding mushrooms, tofu, and scallions.

  4. Continue simmering for another 3 to 4 minutes.

  5. Season to taste with salt or soy sauce.
