Instructions

  1. Bring water to a boil, then parboil 1/2 pound mung bean sprouts for 2 minutes.

  2. Drain the sprouts, rinse under cold water, and squeeze out excess moisture.

  3. Combine sprouts with 1 finely chopped scallion, 2 teaspoons minced garlic, 2 teaspoons sesame oil, 1 teaspoon toasted sesame seeds, 1 teaspoon soy sauce, and 1/2 teaspoon salt.

  4. Serve immediately or chill until ready to serve.
