Koose (Spicy Bean Cakes From Ghana)

Instructions

  1. Heat cooking oil in a small to medium saucepan.

  2. Two days prior, soak and de-hull beans.

  3. Blend soaked beans in a sturdy blender, gradually adding 1/4 cup water until smooth.

  4. Add onion, ginger, and Scotch Bonnet pepper to the blender, then pulse until smooth.

  5. Mix sea salt into the batter.

  6. Test oil readiness with a ginger piece; it should sizzle and rise.

  7. Spoon about 5 tablespoons of batter into the hot oil.

  8. Fry for 3 to 4 minutes, turning halfway to brown evenly.

  9. Remove cooked koose with a slotted spoon and drain on paper towels.

  10. Serve with hot pepper sauce, tomato gravy, or traditional Hausa koko.
