Kombu dashi is a simple Japanese vegetarian stock prepared by gently heating dried kelp in water.

Instructions

  1. Wipe the kombu clean with a cloth.

  2. Combine water and kombu in a deep pot, then soak for 30 minutes.

  3. Place the pot over low heat and gradually warm; remove the kombu just before the water boils.

  4. Take the dashi off the heat; use it immediately or store it in the refrigerator.
