Instructions

  1. Heat oil to high.

  2. Wash and trim zucchini, then slice it lengthwise into 1/8- to 1/16-inch thick strips, cutting longer pieces to about 3 inches.

  3. Toss zucchini slices with salt; let sit 20-60 minutes, then drain liquid.

  4. Whisk soda water, flour, and salt to make the batter.

  5. Coat zucchini in batter; fry pieces in hot oil for about 5 minutes until golden and crispy, flipping once.

  6. Drain on paper towels and serve immediately.
