Instructions

  1. Cut meat into serving-sized pieces or form into meatballs.

  2. Sauté onion in 2-3 tablespoons oil in a stew pot over medium heat until translucent.

  3. Add remaining oil, increase heat, and brown the meat on all sides.

  4. Stir in wine to reduce the pot's temperature.

  5. Add tomatoes, salt, pepper, bay leaves, and tomato paste; stir to blend.

  6. Reduce heat and simmer partially covered for 1.5 to 2 hours, until the meat is tender, adding water if the sauce dries.

  7. Remove bay leaves and serve.
