Kohlrabi Side Dish in Creamy Sauce

Instructions

  1. Peel and cut kohlrabi into slices or cubes, reserving tender inner leaves if available.

  2. Start boiling vegetable broth or salted water, then add the kohlrabi and cook for 5 to 10 minutes until soft; drain and reserve the cooking liquid.

  3. Melt butter in a pan, stir in flour, and cook over medium heat for several minutes, stirring constantly.

  4. Gradually add 1 to 2 cups of the reserved broth, stirring until smooth and bubbling, then season with nutmeg and salt.

  5. Stir the cooked kohlrabi into the sauce and heat through; garnish with chopped reserved leaves and parsley before serving.
