Peel and grate the kohlrabi.

Using a clean towel, squeeze all excess liquid from the grated kohlrabi.

In a large bowl, beat the egg thoroughly, then combine it with the drained kohlrabi.

Stir in the flour and salt until well combined.

Heat 1/4-inch of oil in a large frying pan over medium-high heat until shimmering.

Drop spoonfuls of batter into the hot oil, flatten slightly, and cook partially covered for 2-3 minutes per side until golden brown and tender.
