Instructions

  1. Peel and grate the kohlrabi.

  2. Using a clean towel, squeeze all excess liquid from the grated kohlrabi.

  3. In a large bowl, beat the egg thoroughly, then combine it with the drained kohlrabi.

  4. Stir in the flour and salt until well combined.

  5. Heat 1/4-inch of oil in a large frying pan over medium-high heat until shimmering.

  6. Drop spoonfuls of batter into the hot oil, flatten slightly, and cook partially covered for 2-3 minutes per side until golden brown and tender.

  7. Transfer cooked fritters to a paper towel-lined plate to drain, then serve immediately.
