Instructions

  1. Combine dashi stock, sugar, soy sauce, and mirin in a saucepan; bring to a boil and stir until sugar dissolves.

  2. Add aburaage to the saucepan, reduce heat to medium-low, and simmer for about 7 minutes, turning occasionally, until most liquid is absorbed. Cover and set aside.

  3. While aburaage simmers, cook udon noodles as per package instructions; rinse, drain, and portion into 4 bowls.

  4. In a separate saucepan, heat dashi stock, mirin, soy sauce, and salt to a boil, stirring occasionally.

  5. Pour the hot soup over the udon in each bowl, then top with the braised aburaage, kamaboko (if using), and scallions. Serve immediately.
