Kinpira Renkon

A traditional Japanese stir-fried lotus root dish, known as kinpira renkon, is considered a good luck food.

Instructions

  1. Soak lotus root slices in water for 5-10 minutes, then drain and pat dry.

  2. Heat vegetable and sesame oils in a large skillet.

  3. Stir-fry carrot and lotus root slices over medium heat until the lotus root becomes translucent.

  4. Add sake and stir-fry until the liquid evaporates.

  5. Stir in mirin and sugar, continuing to stir-fry until the liquid is gone.

  6. Add soy sauce and quickly stir-fry.

  7. Remove from heat and sprinkle with sesame seeds.
