Kid-Friendly Turkey and Beef Meatloaf

A kid-friendly turkey meatloaf features finely chopped, hidden vegetables and is topped with a homemade BBQ sauce.

Instructions

  1. Preheat the oven to 350 F and grease a 9x5-inch loaf pan.

  2. Combine beef, turkey, eggs, and breadcrumbs in a large bowl.

  3. Finely chop carrots, onion, garlic, and green pepper; sauté in oil for 2 minutes.

  4. Finely chop mushrooms, add to the sautéed vegetables, and cook for 1 minute; set aside to cool.

  5. Prepare the sauce by mixing ketchup, mustard, Worcestershire, vinegar, brown sugar, red pepper, salt, and black pepper.

  6. Add three-quarters of the sauce, the cooled vegetables, and mushrooms to the meat mixture; blend well.

  7. Press the mixture into the loaf pan or shape into a free-form loaf.

  8. Bake for 1 hour and 15 minutes.

  9. Drain any excess grease, then spread the remaining sauce over the loaf and continue baking for 15 minutes.
