Instructions

  1. Combine oats, coconut flakes, peanut butter, honey, chocolate chips, flax seed, vanilla extract, and salt in a large bowl.

  2. Stir until all ingredients are well-combined.

  3. Roll the mixture into two-teaspoon-sized balls, place them on wax paper, and freeze for 10 minutes.

  4. Melt dark chocolate wafers in a microwave-safe bowl, heating in 15-second increments and stirring between each, until completely melted.

  5. Remove chilled energy bites; drizzle or dip them in the melted chocolate and return to the wax paper.

  6. Chill the finished bites for one hour before serving.
