Kibe: Brazilian Beef Croquettes

These fried Brazilian beef and bulgur wheat snacks, originating from the Middle East, are best served warm with lime wedges and tahini sauce.

Instructions

  1. Bring beef broth or water to a boil, then pour over bulgur wheat in a heatproof bowl and let rest for 30 minutes.

  2. For the filling, sauté half the onions, garlic, cinnamon, and nutmeg in 2 tablespoons olive oil. Add one-third of the ground beef, cook until browned, then stir in parsley for 1-2 minutes; season and set aside.

  3. Drain excess liquid from the bulgur wheat, pressing with a spoon.

  4. Combine drained bulgur wheat, remaining ground beef, raw onions, mint leaves, 3/4 teaspoon salt, and pepper in a food processor; process until a smooth dough forms.

  5. Form golf-ball sized portions of the bulgur mixture into flat disks. Place 1 tablespoon of the cooked filling in the center, then enclose and seal, shaping into elongated ovals; place on a baking sheet.

  6. Heat oil in a deep pot to 350 F.

  7. Fry kibe in batches until dark brown and crispy.

  8. Drain on paper towels.

  9. Serve warm with lime wedges and tahini sauce.
