Khobz (Basic Moroccan White Bread) Recipe

Instructions

  1. Preheat the oven to 435 F / 225 C.

  2. Lightly oil two baking sheets or dust them with cornmeal or semolina.

  3. Combine flour, salt, and sugar in a large bowl. Add yeast to a well, then pour in oil and water, mixing to dissolve yeast and incorporate all ingredients into dough.

  4. Knead the dough on a floured surface for 10 minutes by hand or 5 minutes by machine until smooth and elastic, adjusting flour or water as necessary.

  5. Divide the dough in half, shape each portion into a smooth circular mound, and place them on the prepared pans. Cover and let rest for 10-15 minutes.

  6. Flatten the rested dough into 1/4-inch thick circles, then cover and allow to rise for approximately 1 hour until it springs back when pressed.

  7. Score the top of the bread with a knife or poke with a fork to create steam vents.

  8. Bake for about 20 minutes, rotating halfway through, until golden brown and hollow when tapped.

  9. Transfer the baked bread to a rack or towel-lined basket to cool.
