Khatta Meetha Karela: Sweet and Sour Bitter Gourd
A sweet and sour Indian side dish, khata mettha karela, is made from bitter gourd and often served with hot chapatis.

Wash and dry bitter gourds, then trim their ends.

Slit the gourds vertically, scoop out all seeds, and cut the halves into 1/4-inch-thick pieces.

Heat oil in a pan; add curry leaves, cumin, mustard seeds, and green chilies.

Once the spices splutter, add chopped onion and sauté for 1 minute, then add ginger-garlic paste and sauté for another minute.

Stir in coriander, mango powder, turmeric, and red chili powder; sprinkle water and sauté for 1 minute.

Add the bitter gourd pieces, tamarind paste, and salt; stir and cook until the gourd is soft.

Stir in jaggery, allowing it to melt and lightly caramelize.

Remove from heat and garnish with fresh coriander leaves.
