Key Lime Pie With Meringue or Whipped Cream Topping

Instructions

  1. Preheat the oven to 325 F.

  2. Combine condensed milk and egg yolks until smooth; stir in whipping cream, lime juice, and 1 to 1 1/2 teaspoons lime zest.

  3. Pour into a graham cracker crust and bake for 15 to 20 minutes.

  4. Remove from oven. If using meringue, increase oven temperature to 350 F.

  5. If not making meringue, cool the pie, then top with whipped cream and lime zest before serving.

  6. For meringue, beat egg whites until soft peaks form, then gradually beat in sugar, cornstarch, and salt until smooth.

  7. Spoon meringue onto the hot pie, spreading to the crust, and bake at 350 F for 12 to 15 minutes, or until browned.
