Keto Tiramisu

Instructions

Preheat the oven to 325°F.

In a mixing bowl, combine flours, sweetener, salt, and cinnamon, then stir to remove lumps.

Add butter and allulose syrup, mixing with a pastry cutter until pebble-sized dough forms.

Press the dough onto a lined cookie sheet to a 1/2-inch thickness and cut into 20 cookies.

Bake for 11 to 12 minutes until golden, then cool completely.

Whip heavy cream until stiff peaks form, then gently whisk in mascarpone until just combined.

Mix rum extract and stevia into the coffee.

Arrange 6 cookies in a 9x5-inch loaf pan and brush them with the coffee mixture.

Spread 1/3 of the mascarpone cream over the cookies, then dust with 1 tablespoon of cocoa powder.

Repeat the layering process two more times, breaking up extra cookies to fill gaps, and finish with a cocoa dusting.
