Instructions

  1. Preheat the oven to 250 F. Spread cubed cornbread on a parchment-lined baking sheet and bake for 1 hour, or until golden and dry. Increase oven temperature to 375 F.

  2. Melt butter in a sauté pan over medium heat, then add onion and celery. Sauté for 3 to 5 minutes until soft and translucent; remove from heat.

  3. Whisk broth, eggs, poultry seasoning, thyme, pepper, and salt together in a bowl.

  4. Combine toasted bread cubes, sautéed vegetables, parsley, and sage in a 2- to 3-quart casserole dish.

  5. Pour the liquid mixture over the casserole. Cover with foil and bake at 375 F for 40 minutes, or until liquid is absorbed. Remove the foil and bake for an additional 10 minutes until the top is crispy and browned. Serve with fresh parsley.
