Instructions

  1. Preheat the oven to 300 F.

  2. Cut pork into 2-3 inch pieces. In a large bowl, toss pork with salt, chili powder, onion powder, smoked paprika, garlic powder, cumin, pepper, and sweetener until coated. Let stand 30 minutes at room temperature.

  3. Heat oil in a Dutch oven over medium-high heat. Sear spiced pork until caramelized on all sides, about 10 minutes.

  4. Remove from heat, add chicken broth, stir, cover, and bake for 3 hours until tender.

  5. Remove pork from oven and cool slightly. Drain excess liquid, then shred meat with forks. Turn oven to broil.

  6. Spread shredded pork on a foil-lined baking sheet. Broil for 5 minutes until crispy. Serve with keto BBQ sauce.
