Keto Pork Chops With Roasted Broccoli and Fennel

Instructions

  1. Preheat the oven to 250°F and gather all ingredients.

  2. Season pork chops liberally with salt and pepper by pressing them into a seasoned board.

  3. Heat olive oil and butter in a ridged grill pan over medium heat. Sear pork chops for 7 minutes per side until browned with grill marks and firm.

  4. Transfer chops to an ovenproof dish, cover with foil, and rest in the preheated oven, reserving the unwashed pan.

  5. Return the same pan to medium heat. Add broccoli florets and cook for 3 minutes, shaking occasionally until colored; then remove and set aside.

  6. Increase heat slightly, add white wine to deglaze the pan, stirring to scrape up bits, and reduce to about one tablespoon.

  7. Reduce heat to medium, add chicken stock, and simmer until reduced by half. Stir in cream and fennel fronds, cook for a few minutes, then add broccoli and Parmesan cheese.

  8. Uncover pork chops, pour sauce and vegetables over them, and serve immediately.
