A tender and flavorful keto meatloaf combines ground beef, chorizo, and pork rinds instead of breadcrumbs for a hearty meal.

Instructions

Preheat the oven to 350 F.

In a large bowl, combine ground beef, chorizo, and pork rinds; mix well without overmixing.

Whisk together the egg, Parmesan cheese, milk, parsley, Italian seasoning, salt, and pepper.

Pour the egg mixture over the meat; add onion and garlic, then mix until evenly combined.

Form the mixture into a loaf shape and wrap with bacon strips.

Place the loaf on a cooling rack over a foil-lined baking sheet, then pour tomato sauce over it.

Bake uncovered for 1 hour or until the internal temperature reaches 165 F; optionally, increase the temperature to 375 F for the final 5 minutes for crispier bacon and a caramelized top.

Allow the meatloaf to cool slightly before slicing and serving.
