Instructions

  1. Preheat the oven to 350 F.

  2. In a large bowl, combine ground beef, chorizo, and pork rinds; mix well without overmixing.

  3. Whisk together the egg, Parmesan cheese, milk, parsley, Italian seasoning, salt, and pepper.

  4. Pour the egg mixture over the meat; add onion and garlic, then mix until evenly combined.

  5. Form the mixture into a loaf shape and wrap with bacon strips.

  6. Place the loaf on a cooling rack over a foil-lined baking sheet, then pour tomato sauce over it.

  7. Bake uncovered for 1 hour or until the internal temperature reaches 165 F; optionally, increase the temperature to 375 F for the final 5 minutes for crispier bacon and a caramelized top.

  8. Allow the meatloaf to cool slightly before slicing and serving.
