Instructions

  1. Pulse almonds in a food processor until some are pulverized and some remain chunky.

  2. Add almond butter, unsalted butter, confectioners' erythritol, vanilla, and salt to the processor, then process for one minute, scraping sides halfway through.

  3. Chill the mixture for 30 minutes, then scoop into even portions onto a parchment-lined baking sheet, re-chilling if it softens.

  4. Melt chocolate and drizzle over each ball.

  5. Freeze for 15 minutes to firm, then store in an airtight container in the refrigerator for up to a week.
