Keto Eggnog
A keto-friendly eggnog, prepared with traditional spices and techniques, utilizes alternative sweeteners and almond milk for a holiday beverage.

Instructions

Start heating almond milk, cream, cinnamon, and nutmeg in a saucepan over medium-high heat until it boils; remove immediately.

Whisk egg yolks with powdered sweetener in a bowl until light and frothy.

Slowly temper the egg mixture by gradually adding half of the hot milk mixture while continuously whisking.

Return the tempered egg mixture to the saucepan with the remaining milk, cream, and spices; whisk vigorously over medium-low heat until thickened, approximately 160 F, for about 7 minutes.

Remove from heat, then whisk in stevia and extracts.

Strain the eggnog to remove any lumps, then refrigerate until cold, about 2 hours.
