Instructions

  1. Preheat the oven to 375 F and grease an 8x8-inch baking dish.

  2. Whisk almond flour, coconut flour, sweetener, baking powder, xanthan gum, and salt in a large bowl.

  3. Add eggs, melted butter, almond milk, and vanilla to the dry mix; whisk until lump-free and sticky.

  4. Rest the dough on plastic wrap or parchment paper for 10 minutes.

  5. Combine cinnamon and sugar in a small bowl.

  6. Roll the dough into a 6x9-inch rectangle between two sheets of parchment or plastic wrap.

  7. Dot with butter, then evenly sprinkle the cinnamon-sugar mixture over the dough, leaving a 1/2-inch border.

  8. Roll the dough horizontally into a log using the bottom parchment/plastic.

  9. Cut the log into nine pieces and place them cut-side up in the prepared dish.

  10. Bake for approximately 25 minutes, until golden.
