Instructions

  1. Combine flours, xanthan gum, baking powder, and salt in a medium bowl; add egg, melted butter, and milk, then stir to form a dough.

  2. Scoop the dough onto a parchment-lined cookie sheet and set aside while preparing the soup.

  3. Melt butter in a large pot over medium-high heat, then sauté onion for 3 minutes until translucent.

  4. Add thyme, sage, salt, and pepper; sauté for 2 additional minutes.

  5. Pour in chicken broth, cover, and bring to a boil over high heat.

  6. Reduce heat to medium-high; lightly pack and add dumplings to the broth.

  7. Cook for 2 to 3 minutes until dumplings are glossy and opaque.

  8. Reduce heat to low, add cooked chicken and heavy cream, then stir until heated through and serve.
