Instructions

  1. Preheat oven to 325°F. Prepare a 12-cup muffin pan with cooking spray or nonstick liners.

  2. Combine all crust ingredients, then press 1 1/2 tablespoons into the bottom of each muffin cup.

  3. Bake crusts for 10 minutes; cool while preparing the filling.

  4. Beat softened cream cheese until smooth.

  5. Incorporate eggs one at a time, then beat in sweetener, extracts, and salt.

  6. Pour filling over the cooled crusts, filling each cup at least 3/4 full.

  7. Bake for 20 minutes. Cool for 1 hour, then refrigerate 2-3 hours before serving.
