Kentucky Bourbon Cake

Instructions

  1. Combine cherries, raisins, and bourbon in a medium bowl; cover and soak overnight.

  2. Preheat oven to 275 F.

  3. In a large bowl, cream butter and sugars until light; beat in egg yolks.

  4. Stir the soaked fruit with bourbon into the creamed mixture. In a separate small bowl, combine 1/2 cup flour with pecans. Add remaining flour, nutmeg, and baking powder to the batter and blend well.

  5. Beat egg whites until stiff peaks form; gently fold them into the cake batter, followed by the floured pecans.

  6. Grease and flour a 10-inch tube pan, line the bottom with greased waxed paper. Pour batter into the pan and bake at 275 F for 3 to 3 1/2 hours, or until a pick comes out clean.

  7. Cool the cake on a rack, then remove from the pan, peel off waxed paper, and store in a tightly covered container for several days.
