Instructions

  1. Peel and grate 1 large English cucumber, then squeeze out as much liquid as possible using a clean kitchen towel.

  2. In a medium bowl, combine the squeezed cucumber with 1 (8-ounce) softened cream cheese, 3 tablespoons mayonnaise, 1 tablespoon grated sweet onion, 1/2 teaspoon hot sauce, 1/4 teaspoon salt, and 1/4 teaspoon black pepper; mix until thoroughly combined.

  3. Optionally, stir in green food coloring drop by drop until the desired color is achieved.

  4. Garnish with finely chopped fresh chives. Serve immediately or refrigerate for up to 2 days.
