Kentucky Benedictine Dip (or Spread)

A bright green cucumber and cream cheese spread, Benedictine is perfect for vegetable dips or sandwich toppings.

Instructions

  1. Peel and halve the cucumber, then scrape out its seeds.

  2. Grate or coarsely chop the cucumber.

  3. Combine the grated cucumber, cream cheese, grated onion, salt, pepper, and mayonnaise in a blender or food processor, then blend until smooth. An electric mixer can be used for a less smooth result.

  4. Optionally, mix in a few drops of green food coloring until well blended.

  5. Transfer and serve Benedictine as a dip or sandwich spread.
