Instructions

  1. Heat oil in a large skillet over medium-high heat until shimmering.

  2. Wash, peel, and coarsely grate the potatoes. Squeeze their liquid into a bowl and let it settle.

  3. Discard the top liquid layer, retaining the potato starch at the bottom, then combine the potatoes with this starch.

  4. Grate the onion into the potato mixture, then add salt, pepper, nutmeg, and egg; mix thoroughly.

  5. Drop 1/2 cup of the potato mixture into the hot oil, flatten, and fry 4-5 minutes per side until golden brown.

  6. Drain potato pancakes on paper towels and serve hot, optionally with applesauce, sour cream, or parsley.
