Instructions

  1. Preheat the oven to 390 F.

  2. Beat butter and sugars, then mix in vanilla and rum.

  3. Combine flour with cardamom, baking powder, and salt, then mix into the butter mixture to form a stiff dough.

  4. Shape the dough into 1-inch diameter rolls, wrap in plastic, and chill for at least 2 hours.

  5. Slice the chilled dough into 1/4-inch thick pieces, place on a cookie sheet, and press a crosshatch pattern with a fork.

  6. Bake for 12 to 15 minutes until set and lightly browned.

  7. Cool cookies on a rack.

  8. Melt chocolate couverture as directed, then dip cooled cookies halfway and let harden on wax paper.
