Instructions

Lay salted plastic wrap flat on a surface.

Place warm rice onto the wrap, flatten it, and create a thumbprint indent in the center.

Microwave karashi mentaiko for 10 to 15 seconds until cooked.

Put the cooked mentaiko into the rice indent, then bring the plastic wrap ends together to enclose the filling.

Gently squeeze and rotate the rice ball in your cupped hands to form a thick, flat triangular shape.

Unwrap the onigiri, then wrap it with a dried seaweed sheet; serve immediately or pack for later.
