Kappamaki (Cucumber Sushi Roll)

A simple and popular Japanese-style cucumber roll, known as kappamaki, can be easily prepared with just three ingredients.

Instructions

  1. Wrap a bamboo mat completely in plastic, then place a nori sheet lengthwise on top.

  2. Using damp hands, spread about 1/2 cup of sushi rice evenly over the nori.

  3. Place 3 to 4 cucumber sticks horizontally across the rice.

  4. Roll the bamboo mat forward, pressing firmly to shape the sushi into a cylinder.

  5. Unwrap the mat and remove the finished sushi roll; repeat the process for additional rolls.

  6. Wipe a knife with a wet cloth before slicing each sushi roll into 6 to 8 bite-sized pieces and serving.
