Instructions

  1. Preheat oven to 325-350 F.

  2. Trim fat from the pork, then make shallow cuts or pierce it liberally, and rub with salt and liquid smoke.

  3. Wrap the seasoned pork in a banana leaf (or top with whole bananas), then cover with ti leaves or aluminum foil, and tie securely.

  4. Roast for about 45 minutes per pound, then remove coverings and shred the pork.
