Instructions

  1. Heat 4 inches of oil to 340 F in a deep pan.

  2. Lightly combine a beaten egg, ice water, and sifted flour in a large bowl to form the tempura batter.

  3. Add onion slices, carrot strips, and scallops to the batter and mix.

  4. Scoop portions of the mixture, carefully place into the hot oil, and shape as needed.

  5. Deep-fry until browned on both sides, then drain and serve with tempura dipping sauce.
