Kaki Fry (Japanese Fried Oysters)

Japanese breaded and deep-fried oysters, known as Kaki fry, are a seasonal dish best served with lemon, tartar, or tonkatsu sauce.

Instructions

  1. Heat 1-2 cups canola oil in a pot to 350 F.

  2. Clean and dry oysters, then season with salt and pepper.

  3. Set up a breading station with flour, beaten eggs, and panko in separate dishes.

  4. Coat oysters sequentially in flour, then egg, then panko.

  5. Fry breaded oysters in the hot oil for 1-2 minutes per side until golden and floating; drain on paper towels and keep warm.

  6. Serve fried oysters immediately with shredded cabbage, lemon wedges, and your choice of tonkatsu or tartar sauce.
