Kaju Katli
Kaju katli is a traditional Indian cashew-based confection, resembling marzipan, often enjoyed as a celebratory treat, especially during Diwali.

Instructions

Soak 1000 grams (7 1/4 cups) cashew pieces in water for 2 hours.

Drain cashews, then blend in a food processor, in batches, into a mostly smooth paste, scraping sides as needed, without adding extra water.

Transfer the paste to a bowl, mix in 800 grams (4 cups) granulated sugar, and let it sit for 30 minutes.

Cook the cashew-sugar mixture in a heavy pan over low heat for 30 to 35 minutes, stirring continuously, until it forms a non-sticky dough.

Transfer the mixture to a stand mixer and stir on low speed with a paddle attachment for about 15 minutes, until the bowl feels warm.

Scrape the mixture onto a parchment-lined sheet pan.

Spread it evenly to about 1 cm (1/3 inch) thickness using parchment paper or a rolling pin.

Optionally top with 1 sheet edible silver. Let it harden overnight, then cut into diamond shapes.
